Our Domaine Eden Pinot is a classic interpretation of the variety. The word is “elegant” – nothing is exaggerated or out of place and the acidity is balanced with moderate alcohol. It is just as it should be.
Grown on a north facing slope at 1600 feet on our Domaine Eden estate, the grapes were harvested from August 17th – September 16th under perfect late summer days. All fermentations were natural and the wine was aged for 12 months in one to three-year-old French oak. There was no fining or filtration before bottling, a natural wine in its essence.
The aromas speak of cherries with a note of forest spice. Flavors echo the more deep cherry fruit and subtle oak flavors. This Pinot will continue to develop and improve for the next decade.
