The Cabernet Sauvignon vineyards at Mount Eden are located at our lowest vineyard elevations, 1,400 feet. The added warmth found at these lower sites is needed for the Cabernet to develop the proper balance of aromas and flavors. This contrasts strongly with our other estate-grown varieties, Chardonnay and Pinot Noir, which demand the coolness of the highest elevations. This is a major reason why we are able to produce such extraordinary wines of such diverse affinities on the same mountain.
The '83 Cabernet Sauvignon is a voluptuous wine of tremendous depth of flavor and seductive accessibility. The nose is rich in currant-blackberry scents with just a touch of the dill-earth complexity which is the signature of our vineyards. The 35 year old dry-farmed vines give the wine a fullness and straighten but with a consistent sense of balance that ensures its longevity.

Tech Notes
The grapes were picked at 22.2° brix, with a pH of 3.3, and 8.1 grams per liter titratable acidity. The finished wine has a pH of 3.7, titratable acidity of 6.5 grams per liter, and 12.6% alcohol.
